Chia Seed Pudding with Balsamic Strawberries

Chia seed pudding: 

1. Coconut milk - 1 cup (I used coconut milk light for this recipe)
2. Chia seeds - 3 tbsp
3. Maple Syrup - 3 tbsp
4. Vanilla extract - 1 tsp

Balsamic Strawberries: 

1. Strawberries - 1 cup, sliced
2. Maple syrup - 2 tbsp
3. Balsamic Vinegar: 2 tsp


1. Put all the ingredients for the chia pudding in a jar or bowl, cover and refrigerate overnight or for 6-8 hours.
2. Combine the strawberries, maple syrup and balsamic vinegar and set aside at room temperature for an hour.
3. Spoon the chia pudding into a serving bowl and serve with the balsamic strawberries on top. Add some nuts if desired for some crunch.
