Kovakka Thoran (Ivy Gourd Stir fry with Grated Coconut )



Ingredients: 

1. Ivy Gourd - 1/2 lb, Chopped 
2. Oil - 1-2 tbsp
3. Mustard seeds - 1 tsp
4. Garlic - 3-4 cloves, finely chopped
5. Onion - 1 medium sized, finely chopped
6. Turmeric - 1/2 tsp 
7. Chilli powder - 1/4 tsp
8. Amchur (Dry mango) powder - 1/4 tsp
9. Green chilli - 3-4 chopped
10. Grated coconut - 1/2 cup
11. Salt - To taste

Preparation: 

1. Heat oil in a pan and splutter mustard seeds. 
2. Add the chopped garlic and saute for a few seconds. 
3. Add the onion and saute. Add the turmeric, chilli powder and amchur powder. 
4. Add the chopped ivy gourd and salt and a little water. Cover and cook for 10-15 min until the ivy gourd is cooked. 
5. Add the grated coconut, green chilles and curry leaves. Mix for about a minute. 
6. Serve warm with rice or rotis.
