Nothing like a warm beef stew for a cold winter day...!! Beef stew and Appam = Happy me.. :D ! And this is one of the easiest and tastiest recipes..

Ingredients:

1. Beef - 1/2 lb
2. Carrots - 2-3 chopped
3. Green peas - 1 cup
4. Potatoes - 2 big chopped (I like to leave the skin on, more tasty, more healthy!)
5. Thick coconut milk - 2 cups.
6. Chicken stock - 2 cups
7. Green chillies - 5-6 chopped
8. Onion - 1 chopped
9. Garlic - 3-4 cloves finely chopped
10. Ginger - 1 inch piece finely chopped
11. Curry leaves - 1 sprig
12. Turmeric - 1/2 tsp
13. Black pepper - 1 tbsp freshly ground
14. Cinnamon - Whole 3 inch sticks
15. Green cardamom - Whole, lightly crushed
16.  Cashew and raisins - a few (optional)
17. Salt - As desired

Preparation:

1. Add ingredients 1-4, 6-17  to a pressure cooker and cook until 3-4 whistles or until the beef is well cooked and potatoes are mashed.
2. Bring the heat to a medium low and add coconut milk, cashews and raisins. Stir and cook for 5 more minutes.
3. Remove from the heat. Add a few curry leaves.
4. Serve with warm Appam or rotis.

Enjoy! :D
