Five minute Eggless Chocolate Cuppy Cake for Two

It just happened to be one of those ultimate cake craving days - again. And because we are on a diet ;), no eggs, no butter, easy on the sugar. :( . So it has to be an egg-less, butter-less cake - and a cupcake - and just two of them - just to limit the servings and the craving... :P. This is what I whipped up, and it turned out to be just wonderful. I hope you would enjoy this moist low fat cupcake just as I did.

Ingredients:

For the cake:

1. All purpose flour - 1/2 cup
2. Dutch processed cocoa - 1/4 cup
3. Powdered or icing Sugar - 1/4 cup
4. Cold water - 1/2 cup
5. Baking powder - 1/2 tsp
6. Vinegar - 1/4 tsp
7. Salt - 1/4 tsp
8. Oil - 4 tbsp

For the frosting:

2. Dutch processed cocoa - 2 tbsp
3. Icing sugar - 3 tsp

Preparation:

1. Pre-heat the oven to 360 F.
2. Spray any non stick cooking spray on a cupcake pan. I used two small ramekins instead.
3. Sift the dry ingredients one by one in a mixing bowl - flour, cocoa, sugar, baking powder, and salt.
4. Mix the dry ingredients with the wet ingredients well with a whisk. Please keep in mind to add the vinegar only towards the end.
5. Pour them onto the ramekins/cupcake pans and bake for 15 mins or until a toothpick inserted comes our clean.

Tiramisu Cake

This may not be the most authentic recipe, but it is still as close as it can get. I've been looking for a good Tiramisu cake recipe for a long time, have been reading a lot of them and this happens to be what I understood is the basic technique followed. This is my second cake experiment ever, but trust me, it is good.. :)

4. Mix egg yolks and sugar from medium to high speed using a blender until pale thick ribbons are formed. This would take about 10-15 mins.
5. Beat the egg whites well until stiff peaks are formed (you could also add 1 tsp cream of tartar to the egg whites). This would take about another 10 mins.
6. Mix in the sifted flour mixture and milk mixture with a spatula.
7. Butter the baking dish (I used a small loaf pan) and pour the mix into it.
8. Bake for 20-30 mins or until a toothpick inserted comes out clean.
9. Remove from the oven and let cool.
10. Cut the cake into 2 pieces horizontally.
11. Spread the coffee mix onto each cake piece and let sit for 5 mins.
12. Spread the icing onto the first cake layer. Dust with cocoa.
13. Keep the second layer on top of it and add another layer of icing. You could also cover the whole cake with icing gently using a spatula.
14. Dust with cocoa powder.
